Responsible for the preparation and presentation of all raw bar menu items – to include, oysters, clams, shrimp, crab, lobster and other raw bar menu items.


  • Provide excellent guest service to both internal and external guests.
  • Actively supports the company culture of creating a fun and entertaining experience for internal and external guests.
  • Responsible for cleaning, preparing and opening all menu items served at P.J. Clarke’s or Banquet Raw Bar.
  • Responsible for setting up the raw bar daily, including building the required ice display, all required sauces and all required condiments.
  • Maintaining a fully stocked and appealing raw bar at all times.
  • Proficient, efficient and timely opening of shellfish, including littlenecks, cherrystones and oysters to quickly fulfill orders.
  • Prepares necessary condiments and sauces, including cocktail sauce, remoulade sauce, specialty sauces, etc., as needed.
  • Operates in conjunction with Tioga Downs’ safety standards and sanitation practices at all times.
  • Performs as a team member with Line Cooks, Dishwashers, Prep Cooks, Supervisors, Chefs, Servers, Utilities, and pertinent company Associates in producing a smoothly and efficiently run operation on a scheduled shift.
  • Follows all recipes and control procedures.
  • Responsible for maintaining a clean and sanitary area at all times in full accordance with State Health Regulations.
  • All other duties as assigned.



High School diploma or G.E.D. required. Two years’ experience as a raw bar attendant is preferred.
